Pierre Thiam is the Chef and owner of Le Grand Dakar, which he opened in 2006. He was raised in Senegal, spending time in both the cosmopolitan city of Dakar and also in a rustic region in the coastal province of Casamance. Family meals were inspired by elegant Senegalese food as well as traditional French, Vietnamese and Moroccan cuisines.
